Tea & Caffeine: Why tea often feels "gentler" than coffee
Tea contains caffeine – but it is often perceived differently in tea. This is mainly due to the interplay with natural tannins. Depending on the variety and brewing time, tea can be stimulating without making you "nervous."
Rule of thumb:
Short infusion = rather fresh & activating
Longer infusion = rounder, stronger, less "sharp"
Brewing Time & Temperature: The quickest lever for better taste
Many teas are not "bought badly," but simply prepared incorrectly. Two adjustment screws make the biggest difference:
Temperature
Green tea and some specialties prefer it cooler – otherwise it quickly becomes bitter. Black tea tolerates hotter water better.
Brewing time
The longer the tea steeps, the more intense the flavor and body. Too long can bring too much bitterness in some varieties.
If you are unsure: Start with a slightly shorter brewing time – you can always steep it longer.
